The Mixer’s purpose is to mix the flour with the rest of the dough’s required ingredients.
This process will turn the flour into an intact and coherent dough.
You can choose between:
A Fixed Bowl Mixer: the dough can be pulled out from within, manually using hands to after be placed in fermentation tubs, whereby the fermentation process begins.
A Removable Bowl Mixer: No need to remove, touch, or adjust the dough. The whole benefit resides in having the bowl ready for all processes. Without touching the dough, the fermentation process begins in the bowl itself, which later will be placed on a lifter whereby the dough will be automatically poured into the divider’s hopper to start the dough cutting procedure.
