Dough Mixer
The Dough Mixer is designed to combine flour with the rest of the required dough ingredients and transform them into an intact, coherent dough mass ready for the next production stages.
As one of the first core machines in the bakery process, it prepares the dough under controlled mechanical mixing conditions before fermentation, dividing, and downstream handling.
The mixer can be configured in different formats depending on the bakery’s workflow, handling preference, and level of process automation.

Mixing Flour Into a Stable Dough Mass
The Dough Mixer handles the initial mixing stage by blending flour with water and the remaining dough ingredients until the mixture becomes uniform and coherent.
This stage is essential for establishing the dough structure that will continue through fermentation and cutting. Stable mixing performance helps support better downstream consistency across the line.
Depending on the selected model, the dough can either be removed manually after mixing or remain in the bowl for a more integrated and less manual production flow.
Fixed Bowl and Removable Bowl Options
The Dough Mixer is available in configurations that suit different production methods, from manual dough handling to more automated transfer into the dividing stage.
Fixed Bowl Mixer
In the fixed bowl version, the dough is manually removed from the bowl after mixing and then placed into fermentation tubs where the fermentation process begins.
Removable Bowl Mixer
In the removable bowl version, the dough remains inside the bowl after mixing. Fermentation begins directly in the same bowl, reducing dough handling and limiting unnecessary touching or adjustment.
Bowl Lifter Integration
For removable bowl systems, the bowl can later be placed on a lifter that automatically pours the dough into the divider hopper to begin the dough cutting process.
Role in the Production Process
The Dough Mixer sits at the beginning of the production line and prepares the dough mass that feeds the rest of the bakery process. Its role is to deliver a properly mixed dough that can move into fermentation and then into dividing and shaping.
In higher automation setups, removable bowl mixers and bowl lifters help streamline the transition from mixing to dividing while reducing manual intervention.
Key Functional Advantages
Coherent Dough Formation
Mixes flour and the required ingredients into a uniform dough mass ready for the next process stages.
Multiple Workflow Options
Available in fixed bowl and removable bowl versions to match manual or more automated production setups.
Reduced Dough Handling
The removable bowl option limits unnecessary touching or transferring of the dough after mixing.
Fermentation in the Bowl
In removable bowl configurations, fermentation begins directly in the mixing bowl after the dough is prepared.
Divider Integration
Bowl lifter compatibility supports automatic discharge of dough into the divider hopper.
Suitable for Industrial Lines
Supports bakery production environments that require dependable dough preparation before continuous downstream processing.
Used in Flatbread and Pita Production
The Dough Mixer is integrated into bakery lines that require controlled dough preparation before fermentation, dividing, proofing, sheeting, and baking.
Pita Bread
Supports the dough preparation stage for pita and Arabic bread manufacturing.
Lebanese Bread
Used in production lines requiring coherent dough development before dividing and proofing.
