Dough Mixer

The Dough Mixer is designed to combine flour with the rest of the required ingredients to form an intact and coherent dough for further bakery processing.

It is offered in different mixer configurations to suit operational preferences, including fixed bowl and removable bowl solutions.

This gives bakeries the flexibility to choose between manual dough extraction or a workflow that keeps the dough inside the bowl through fermentation and transfer to the next stage.

Mixing Flour and Ingredients into Coherent Dough

The mixer’s main function is to blend flour with the required dough ingredients in order to create a uniform and properly developed dough mass.

In a fixed bowl setup, the dough is removed manually and placed into fermentation tubs so the fermentation process can begin.

In a removable bowl setup, the dough remains inside the bowl, allowing fermentation to start without removing, touching, or adjusting the dough before transfer to the next process.

The Dough Mixer sits at the beginning of the line, where raw ingredients are transformed into a finished dough mass ready for fermentation and downstream handling.

When a removable bowl system is used, the bowl can later be placed on a lifter so the dough is automatically poured into the divider hopper to begin the dough cutting procedure.
