Kaak, Breadsticks & Grissini machine
The EXTRA FOUR Kaak & Grissini Machine is an automated production solution designed for forming and depositing different types and sizes of breadsticks directly onto trays. Trays are fed into the machine automatically and positioned one after another for continuous, organized production.
The machine uses hard-chrome-coated or aluminum cylinders and interchangeable forming molds to produce both thin and thick breadsticks. A high-precision stainless steel blade, operated through an electro-pneumatic cutting system, cuts the product to the required length, while the dough-portioning unit distributes a balanced quantity of sesame when needed.
A programmable touch-screen control system with PLC and inverters allows operators to store and recall different breadstick sizes and production settings. Supplied with molds for thin and thick products, as well as flat and curved trays, the machine is suitable for producing sesame kaak, plain grissini, seasoned breadsticks, and similar baked snack products.

Perfectly sized Kaak & Breadsticks
The EXTRA FOUR Kaak & Grissini Machine automatically forms and deposits dough into uniform breadsticks according to the selected product dimensions. Interchangeable forming molds and durable hard-chrome-coated cylinders allow the machine to process both thin and thick products, including kaak, grissini, breadsticks, and similar baked snacks.
After forming, a high-precision stainless steel blade cuts the continuous dough strands to the programmed length. The blade is controlled by an accurate electro-pneumatic cutting system, helping maintain clean cuts, consistent product dimensions, and an organized arrangement on each tray.
A PLC-based control system with a programmable touchscreen and inverters manages the machine settings and operating sequence. Operators can store different product sizes and preferences, then recall the appropriate program when changing between thin breadsticks, thicker kaak, sesame products, or other configurations.
How it is engineered
Flat or curved 600 × 400 mm trays are automatically introduced into the machine and selected one after another for continuous production. As each tray reaches the depositing position, the dough is portioned, passed through the selected forming mold, cut to the required length, and arranged directly onto the tray. When required, the integrated depositing unit distributes a controlled quantity of sesame over the dough before heading to the forming moulds.
Once filled, each tray exits the forming section and is replaced by the next tray in sequence, creating a smooth and repeatable production flow. The prepared trays can then proceed to proofing or directly to baking, depending on the recipe and product type, while the automated tray handling and stored production programs reduce manual intervention and support consistent output.
